Savory Pancakes

2 whole Eggs
1 whole Large Boiled Potato - Grated
1/4 cup Milk

3 tablespoon Warm Water
2 tablespoon Cornstarch
1 tablespoon Whole Wheat Flour – You may use any flour as per choice
1 teaspoon Salt
2 teaspoon Crushed Red Peppers - Optional
1 tablespoon Olive Oil – For making pancakes

Preparation Method

1. In a medium bowl, whisk 2 eggs till frothy.

2. Add milk, water, cornstarch, flour, salt and whisk everything to a smooth batter (1-2min). Pic1

3. Heat the nonstick pan on high, add 1Tbsp oil and reduce heat to medium after1min.

4. Pour 1 ladle of the mixture to the heated pan, reduce the heat to low (If necessary or pancake starts to burn) and sprinkle some red peppers. Pic 2

5. Cook for 1min (OR till the side becomes golden brown) and flip to the other side. Continue cooking the other side till golden brown.

6. Serve Hot along with fresh juice/fruit.
